Frank contends that this is the best Shotible to date. He’s a pretty good authority seeing as he has sampled more than anyone besides Jeff and myself. He even tells us that the thought of them has kept him up at night.
The Key Lime Pie Shot was a great chance to break out the graham cracker crust again. It takes a bit of work to get the right consistency, but in the end, it is totally worth it.
For the filling, I used key lime juice, cream cheese, sweetened condensed milk and spiced rum. I topped it off with a little lime zest.
The Key Lime Pie Shot was definitely a crowd favorite on a hot summer afternoon with friends.

· 3-3/4 cup graham cracker crumbs (one 14.4 ounce box)
· 3/4 cup sugar
· 3/4 – 1 cup of melted butter
Filling:
· 16 ounces of cream cheese, softened
· 3/4 cup key lime juice
· 1 can (14 ounce) sweetened condensed milk
· 1/4 cup spiced rum
Topping:
· Freshly grated lime zest

· Combine graham cracker crumbs and sugar in a large mixing bowl.
· Add 3/4 cup of melted butter and combine thoroughly. The mixture should be like loose sandcastle packing sand. If it is too loose, gradually add more melted butter. WARNING: You do not want it to be too dense.
· Line the ice shot glass mold with plastic wrap to make them easier to remove later.
· Pack the bottom of the mold tightly with the graham cracker mixture.
· Pack the remaining area of the mold loosely with the graham cracker mixture.
· Cover with plastic wrap.
· Insert the top part of the mold.
· Refrigerate for at least an hour.
Filling:
· Combine cream cheese, sweetened condensed milk, key lime juice and spiced rum.
· Remove graham cracker glasses from their molds by pulling on the plastic wrap.
· Pour filling into each graham cracker glass.
· Refrigerate for at least 3 hours.
Topping:
· Top each shot with fresh lime zest.
